Pork Chili
This recipe contains Use-It-All Stew meat from my previous post. If I was going to make a recipe for the stew meat, I had to have something to use it in, right? Here’s a recipe to make your quart of stew meat delicious.
Pork Chili:
Empty the contents of the quart jar of stew meat into a soup pot. Heat it slowly, while adding:
2 tsbp chili powder
1 tsp cumin
½ tsp black pepper
1 tsp salt
2 tsp smoked paprika
½ tsp onion powder
3 garlic cloves
Let that simmer for a minute, then add the quart of home canned tomatoes.
Add two cans of beans. I used kidney beans (to go with the theme of pork kidney), and pinto beans.
Add 8 oz tomato sauce and 1 10 oz can of Ro-tel.
Add enough water to your liking. Depends on how soupy you like your chili.
Let this simmer for 30 minutes to an hour. Taste and add more salt if needed.
