Strawberry Vinaigrette
Still have fresh berries that need to be used up? Here’s a quick and easy vinaigrette for a salad. I had strawberries and salad greens that needed to be used…so I put them together!
The spinach and lettuce raised bed is outta control. I picked all the spinach I could last night for our meal, and then today, there was more. That’s a good problem to have! Same with our lettuce. The leaves are so big and green and needed to be used today! Here comes another salad.
I chopped up our spinach, leafy lettuce, and added a few sprigs of lemon balm to the salad. I used gouda as our cheese of choice; because we require cheese with salad. Goat cheese would be delicious with this dressing. It’s ok if you don’t want cheese, though.
Strawberry Vinaigrette Dressing is easy as 1-2-3:
Put a handful of berries in a food processor or blender. (I say handful because I didn’t measure exactly…probably around ½ cup if you were wanting to be exact.
Add about ¼ cup Extra-virgin olive oil.
Add the same amount, ¼ cup, of white wine vinegar. If you don’t have this on hand, apple cider vinegar will do.
Shake in some salt, pepper, and add about 1-2 tbsp of honey, depending on how sweet you want your dressing.
Blend it up! If it is too thick (depending on the strawberries textures) just add some more oil. Blend until it’s the right consistency for you.
Pour over your bowl of salad greens!
Easy and so sweet and delicious! It’s a nice refreshing salad to have after being out in the heat. Especially if you’ve been in the heat playing with goats and little boys.
