Beefy Alfredo Casserole (THM-S, Low Carb, opt. Gluten free)

Listen everyone. This Beefy Alfredo Casserole was consumed entirely by my family. I have three little boys and a husband…and the 9×13 disappeared before my eyes!
This is a good hefty hearty casserole that made my boys very happy. I don’t think you’ll be disappointed by this. This would be classified a Heavy S for THM…and it uses a bunch of dairy. All the extras were very indulgent…and comforting. So if you’re craving comfort…this is it!

Ingredients and Directions for Beefy Alfredo Casserole
Ingredients:
1 lb ground beef, cooked
Box of pasta cooked according to directions
ÂĽ c. butter, cut into small pieces to place on the bottom of the 9×13 dish.
For the alfredo sauce:
1 lb cottage cheese
4 oz cream cheese
½ c. heavy cream
½ c. almond milk
ÂĽ tsp glucomannan
1 tsp mineral salt
2 tsp dried garlic powder
1 ½ tsp Italian seasoning
½ tsp onion powder
5 tbsp parmesan cheese (green can)
Mozzarella and parmesan cheese to add to the top of the casserole.
Directions:
Preheat oven to 375 degrees.
Cook the ground beef and noodles. (Use any preferred noodles…spaghetti squash, zoodles, Dreamfield’s pasta, or sautéed cabbage.)
Place all the sauce ingredients in a food processor. Process until smooth.

Cut up butter and put in dish.

Place noodles and beef in a 9×13 dish, and add the sauce. Mix all around until everything is incorporated together.
Top the mixture with mozzarella cheese and a sprinkle of parmesan. (I didn’t include a measurement here…because you can decide how much cheesy topping you would like!)


Place the dish in the oven, and cook for 35-45 minutes…watching the last few minutes to make sure the cheese isn’t getting too brown. I pulled it out of the oven when the middle was bubbly.


Beefy Alfredo
Ingredients
- 1 lb ground beef
- 1 box Dreamfield's pasta a low carb option.
- 1/4 cup butter cut into small pieces
For the Alfredo sauce:
- 1 lb cottage cheese (16 oz)
- 4 oz cream cheese I use 1/3 less fat
- 1/2 cup heavy cream
- 1/2 cup unsweetened almond milk
- 1/4 tsp glucomannan optional
- 1 tsp mineral salt
- 2 tsp garlic powder
- 1 1/2 tsp Italian seasoning
- 5 tbsp parmesan cheese Green top can
Topping
- Mozzarella and parmesan cheese
Instructions
- Preheat oven to 375 degrees.
- Cook the ground beef. Boil the noodles until they are cooked through.
- Place the alfredo sauce ingredients in a food processor or blender, and blend until everything is combined.
- Place the cut up butter in a 9×13 casserole dish.
- Place the cooked beef and noodles on top of the butter in the dish. Add the alfredo sauce.
- Top the mixture with a sprinkling of mozzarella and parmesan cheese.
- Place the dish in the preheated oven, and cook for 35-45 minutes. Watch to make sure the cheese on top isn't too brown.
- Enjoy!
Notes
This was delicious and filling. I wasn’t kidding when I said my boys devoured it. They went back for seconds and thirds, maybe fourths!
