What Do I Do With All These Jalapenos?
Right now the garden is teeming with jalapenos.
We brought in a basketful of the little green wonders, and now I’m wondering what else we can do with all of them. My husband enjoys Copperhead Bites immensely. He actually made some for dinner…then ate the leftovers for breakfast. He can’t seem to get enough of these jalapenos!
Me–I’m not so much into the heat. I like them in things. But not by themselves.
Usually, we will pickle dozens of jars of them. It’s an easy recipe…we use vinegar, water, and salt to can the sliced peppers. My husband enjoys these year round, and we even give them as Christmas gifts.

They are a nonstarchy veggie. Obviously low in calories, fat, and carbohydrates. Jalapenos are a good source of Vitamin C, B6, and A. It contains many vital minerals as well! So cool!
The jalapeno pepper lays claim to having more vitamin C than an orange, making it one of the top vitamin C foods. One serving of jalapenos contains 66 percent of the daily recommendation of vitamin C. Vitamin C gives the immune system a boost by producing white blood cells, which helps the body stave off illness.
